Chicken Breast with Basil Cream |

| ingredients: |
2 bonless, skinless chicken breast halves or 4 boneless, skinless chicken thighs (if using breast, slice through to make 4 thinner pieces)
1 tbs extra virgin olive oil
1 clove garlic, chopped
1/4 cup heavy cream (no substitute)
5-7 leaves fresh basil sliced crosswise
2 small plum tomatoes diced
Salt & Pepper to taste

| directions:
| Season chicken with salt and pepper. Heat olive oil in skillet over high heat, add chicken, don't crowd. Reduce heat to medium high and brown chicken slightly on one side 3 minutes, don't overcook, turn and continue cooking about 3-4 minutes. Add heavy cream and simmer slowly until cream is thickened, about 1 minute, add basil and tomatoes. Turn heat to very low and cook until tomatoes are just warm.
Serve with Mushroom Risotto (recipe to follow), plain rice or noodles. |
