Raspberry Pretzel Dessert |

A family favorite during raspberry season! It's a quick & easy dessert to prepare. I also freeze berries from my garden so we can have a little taste of summer all year round!

Top Layer:
1 1/2 Cup of Water
2 Tbl. Corn Starch
1 Cup Granulated Sugar
1 Pkg. Raspberry Gelatin
Middle Layer:
1-8oz. Pkg. Cream Cheese
1 Cup Powdered Sugar
1-8oz. Container of Cool Whip
Bottom Layer/Crust:
1/2 Cup Butter
1 Cup crushed pretzels
3 T Granulated Sugar

Top Layer:
Mix water with corn starch until dissolved & no lumps. Add granulated sugar & bring to a boil stirring constantly. Boil for 1 minute. Turn off heat & add gelatin. Stir until completely dissolved. Set aside to cool (I usually set pan in sink of cold water to speed the process along. Preparing this layer first gives it time to cool).
Bottom Layer/Crust:
Melt butter. Add crushed pretzels & sugar. Pat with a fork into 13x9 pan.
Middle Layer:
Mix cream cheese & powdered sugar. Blend in Cool Whip. Carefully spread on pretzel layer.
Sprinkle berries on top of cream cheese layer. Pour gelatin mixture over berries to coat. Chill in fridge for 2 hours or until set. ENJOY! |
