Pork Tenderloin Medallions

Best if served immediately. I serve with kluski noodles.
recipe yield:
6 servings
preparation time:
15 minutes
cook time:
30 minutes
total time:
45 minutes

ingredients:
1 T. vegetable oil
1/2 c. minced carrots
1 1/2 lbs pork tenderloin (slice into medallions)
2 T. all purpose flour
1 T. fresh basil, chopped
1 T. fresh parsley, chopped
1/2 tsp freshly ground white pepper
1/2 tsp. beef bouillon granules
2/3 c. light cream
1/2 c. dry white wine
 
directions:
Heat oil in skillet over medium heat; cook carrots in oil for 5 minutes, stirring often. Add pork and cook until lightly browned. Remove only pork and keep warm.
In the skillet, stir together flour, basil, parsley, pepper and beef granules. Whisk in light cream, stirring until thick. Stir in wine. Return pork to pan, reduce heat to low and cover. Simmer for 20 minutes, stirring occassionally.
