Microwave Zucchini Bread |

| A recipe from my mother that is easy and good. |

1 cup sugar
1 t. cinnamon
2 eggs
1/2 cup vegetable oil
1/2 cup plain yogurt
1 t vanilla
1 cup grated zucchini
1 3/4 cup flour
1 t baking soda
1 t salt
2/3 cup chopped walnuts

| directions:
| Grease a 6 cup mold or dish that can be used in the microwave. Sprinkle a mixture of 2t sugar and 1t cinnamon over greased surface. Shake to spread evenly, discarding any excess. Beat together eggs, remaining sugar, oil, yogurt, vanilla and zucchini. Stir in remaining ingredients and mix well. Pour into prepared dish and cook on 70% power for 15 minutes or until toothpick inserted near center comes out clean. Rotate dish if bread appears to be rising unevenly.
Let stand 10 minutes before removing from pan. Cool completely before slicing.
Consistency will be lighter than ususal bread baked in the oven.
